The angels’ share is the water and alcohol that evaporate from a wooden cask as spirit matures. In Scotland, roughly 2% a year is often used as a broad reference, but it is not a fixed allowance. The actual loss varies by cask, age, warehouse position, airflow, temperature and humidity.
Why whisky evaporates through oak
An oak cask is not airtight. Its staves hold liquid while allowing slow exchange with the surrounding environment. During maturation, some water and ethanol move through the wood and enter the warehouse air. The space created inside the cask is known as ullage.
The process happens alongside extraction from the oak and chemical changes within the spirit. These mechanisms contribute to maturation, but evaporation alone does not guarantee better flavour. A cask can become balanced, overly woody, leaky or too low in alcoholic strength depending on its starting point and conditions.
For Scotch whisky, maturation must take place in Scotland for at least three years in oak casks with a capacity no greater than 700 litres. Factors that alter evaporation
Temperature and humidity affect how water and alcohol leave the cask. Cask size, stave condition, previous use and warehouse airflow also matter. Smaller casks have more wood surface relative to liquid, while two similar casks in different positions can develop differently.
Age complicates any simple annual calculation. Producer guidance from The Glenlivet says young spirit may evaporate faster before the rate slows. Applying a flat percentage to every year is therefore only an illustration, not a reliable forecast of remaining litres.
Climate comparisons can be useful, but claims about one country’s annual loss should not be copied to every warehouse. The relevant evidence for an owner is the measurement of the actual cask.
How volume and alcoholic strength change
The angels’ share reduces bulk litres, but it may also change alcohol by volume because water and ethanol do not necessarily evaporate in equal proportions. In Scotland’s generally cool, humid conditions, alcoholic strength often declines, yet the direction and rate should still be checked rather than assumed.
Scotch whisky must be bottled at a minimum of 40% alcohol by volume. A cask approaching that threshold can have fewer options and may require earlier action. Remaining litres also affect the potential bottle count, but any estimate must allow for sampling, sediment, processing losses and the bottler’s requirements.

Effects on cost and ownership
Evaporation is a physical risk and cost factor, not a mechanism that assures appreciation. Less liquid remains for sale or bottling, while storage and insurance may continue. Age can add interest for some buyers, but demand also depends on distillery, liquid quality, naming rights, cask condition and market circumstances.
Before buying, request the original fill details and any current regauge. Model conservative volume loss, include future storage, insurance, sampling, movement and bottling costs, and allow for the possibility that no buyer appears on the preferred date.
